Each knife starts with an inspection and basic cleaning. We then sharpen the blade using water stones, carefully refining the edge while removing only the material necessary. Water-stone sharpening helps us work the edge without excessive heat. The edge is then honed and finished on a leather strop. Before your knife is returned, we test the edge and give the blade a final cleaning.

The blades are cleaned again, reassembled, adjusted, lubricated, and tested before being returned to you. If we find worn or damaged parts that may need replacement, we’ll let you know.
